The season three premiere finds Christopher Kimball in Oaxaca, Mexico, where he encounters Jesús Ochoa, the sous chef at Criollo Restaurant, and learns the art of making Carnitas. He subsequently travels to La Olla, meeting Pilar Cabrera, the restaurant's owner and head chef, to master the preparation of Tlayudas.
